I have discovered how little time you have once your kids start doing after school sports, especially when they are young and you have to sit and watch.  I don’t have time to be sitting and doing nothing!  ha ha so 30 minute dinners have become my life savers.  Here are a few of my favourites.

1. CHINESE CASHEW CHICKEN

Made tender and delicious using the same technique as your favourite Chinese restaurant.  You will be surprised at how easy it is!

This Cashew Chicken is just like takeout only made at home!  I made it using both my wok and Thermomix and you really couldn’t tell the difference.  I have included both recipes depending on what you have at home.  Just a warning though, this turned out amazingly moorish, I had to freeze my leftovers to stop myself picking at them.

2. ONE POT SPAGHETTI AND MEATBALLS

One Pot Spaghetti and Meatballs, all cooked together in one pot!  Less dishes and more free time! Made with really simple, minimal ingredients.

Succulent meatballs full of flavour from cooking in the sauce and with the pasta.

Chicken Tacos baked in the oven & made with leftover roast chicken. My favourite Chicken Taco Recipe and it’s so easy! You could also make as pulled pork tacos using leftover slow cooked pork.
